Aug 29, Easy cookie recipes, the quickest route to fabulous desserts

Easy cookie recipes will solve your last minute dessert issues better and faster than any other kind of dessert - okay, a dish of fruit rules. And I'm not just suggesting peanut butter cookies or chocolate chip cookies. They're good but kinda ho-hum.

In case you're so new to the kitchen that you'd appreciate recipes for those guys I've included them as well as a whole bunch that you and your eaters may never have heard of. You can present any of these as "Dessert" and no one will look down on your dessert - they'll be too busy reaching for another one.

V. S. (very special) Oatmeal-Raisin Cookies
Makes 40

James Beard, the famous gourmet chef, used to bake these in ten-pound batches; he'd probably say why bother if you're only making 40 cookies. If Beard made 'em they're terrific - count on it.

1/4 lb butter
1 cup sugar
2 eggs
1 tsp vanilla
1 & 1/2 cups oatmeal
1 &1/2 cups flour
1/2 tsp each baking soda, salt & baking powder
1/2 tsp allspice1 tsp cinnamon1/4 cup milk1 cup each raisins & chopped walnuts

Preheat oven to 350F.

Cream the butter and sugar together. Add the eggs and vanilla and beat until light and fluffy. Stir in the oats.et aside.

Mix and toss the next 6 ingredients, then add the butter-sugar-egg mixture and the milk. Beat until well blended. Stir in the raisins and nuts. Drop by tablespoonfuls onto greased baking sheets, about 2 inches apart. Bake for 12 minutes. Remove and cool on racks. Pumpkin Sandwich Cookies
