19. Aug, real Basil Tomato Soup

Genuine Basil Tomato Soup
Serves 4

Any time I can get full recipe instructions into 4 sentences call I it super-easy, like this one.

1 large onion, peeled and sliced very thin
2 Shallots, peeled and sliced very thin
2 Cloves garlic cloves, peeled and sliced
1 carrot, shredded
4 Tbsp butter (and I believe butter,
1 Tbsp olive oil
2 Tbsp tomato Paste
1/4 cup of flour
1 10,5-oz can chicken broth + 1 can water
Dash, sugar and salt
Freshly ground pepper to taste
1 cup half and half
1 28-oz can diced tomatoes
1/4 cup fresh basil, julienned, + more to ceaselessly
Sprigs of Italian parsley to garnish

Saute first 4 ingredients in butter and olive oil until softened, about 6 or 7 minutes, and then add the tomatoes and tomato paste.

Stir in the flour, add broth and cook until vegetables are tender.

Add sugar, salt, pepper, half and half, Basil and tomato pulp, puree in your processor or blender.

Relentlessly with additional basil and parsley and serve.
