Easy eggplant recipes don't need that 3o minute "salting" IF you use young, small ones. If they called for that procedure you?d never be finished within our time limit.

It's the the really large, older eggplants loaded with those brown seeds that create a bitter flavor. So on this page we?ll assume that you?re using the young, smaller ones which don?t need salting.

Eggplant-Plus Stew
Serves 4

Plus what? Lotsa stuff, but still quick & easy.

1/4 cup olive oil
1 eggplant, chopped
4 cloves garlic, chopped
1 onion, chopped
2 carrots, sliced thinly
2 cups fat-free chicken broth
2 cups of tomato puree
Salt, pepper and oregano to taste
2 medium zucchini, sliced thickly
1/4 cup wine vinegar

In a large saucepan, heat the oil and add eggplant cubes, garlic and onion. Saute for 5 minutes, stirring frequently.

Add the remaining ingredients except the vinegar and bring mixture to a boil; cover, and simmer for 20 minutes. Stir in the wine vinegar and adjust seasonings.

Common Indian Food Ingredients:

Indian Food Recipes are full of ingredients that many of us in America have never heard of. So, here is a very brief description of the most common of the un-common (unless you're Indian) ones:

Aloo - Indian word for potato
Asafetida - dried gum resin of an Indian plant, with a very strong flavor and odor, never eat raw!
Atta - finely ground whole wheat flour used in many Indian breads
Basmati - a long grain rice that cooks up dry, fluffy, and tender
Bhaji - an Indian version of vegetable fritters
Biriani - A dish made of rice baked with a vegetable or meat based filling
Chutney - a blend of fruits and spices cooked into a thick sauce
Elaichi - cardamom, a spice common in curry blends and garam masala
Fenugreek - Small flat seeds or a dried leaf used in curries for slightly bitter flavor
Garam Masala - literally, warm spices; a blend of spices used to flavor dishes that varies by region
Ghee - clarified butter, made by slowly melting butter, skimming the foam, saving the liquid, discarding the white butter
solids...can be heated to a higher temperature without burning than ordinary butter
Halwa - congealed, translucent sweet dish made of fruits and syrups
Jaggery - dried sugar cane juice; the most common form of sugar in India
Korma - a sauce made with yogurt and ground nuts or seeds, especially poppy seeds
Masala - Hindi word for 'spice'
Paratha - unleavened fried bread made with whole wheat flour, soften filled with meat and vegetables
Poppadums - spicy wafers made from lentils or legumes
Raita - a salad made from vegetables and yogurt to accompany hot and spicy dishes
Roti - the Indian word for bread
Samosas - deep fried crisp pastry, filled with vegetables or meat...served as an appetizer
Tandoor - a large, deep oven made from clay that cooks at very high temperatures. Tandoori is the name for any recipe cooked in the tandoor
Vindaloo - a very spicy dish made with garam masala, meat and vinegar

Spicy Mushroom Masala
Serves 4

This tasty Indian dish shouldn?t make a trip to the specialty market necessary; your reasonably well-stocked kitchen will contain all you need.

Ingredients for the paste
1 onion , chopped
2 tomatoes , roughly chopped
1 of ginger (adrak) and garlic (lehsun)
1 of each clove , cinnamon and cardamom
Others
1 tsp oil
1 tsp chilli powder
10 to 15 mushrooms (khumbh)
salt to taste
chopped coriander (dhania) for garnishing

Heat the oil, add the paste and saute on a medium flame for a few minutes.

Add the salt and chilli powder, mushrooms and 1 cup of water, cover and cook for 4-5 minutes.

Serve hot garnished with coriander.

Quick Beef Goulash

Quick beef goulash
Serves 4-6

1 and 1/2 cups uncooked spiral pasta
1 lb beef SIRLOIN steak, cut into 1/8-inch-thick strips
1 Tbsp vegetable oil
1 each medium onion and green pepper, chopped
1 can (14.5 oz) diced tomatoes, undrained
1 and 1/2 cups water
1 cup reduced-sodium beef broth
2 tsp each red wine vinegar and paprika
1 tsp sugar
1/2 tsp each salt, pepper and caraway seeds
2 Tbsp all-purpose flour
1/4 cup cold water

Cook pasta according to package directions.


In a large nonstick skillet, in the meantime stir-fry beef in oil 4-5 minutes until the meat is no longer pink. Add onion and green pepper; Cook and stir for 2 minutes. Stir in tomatoes, water, broth, vinegar and herbs. Bring to boil. Reduce heat; cover and simmer for 15 minutes.


Combine flour and cold water in a small bowl until smooth. Add to skillet, bring to a boil; Cook and stir for 2 minutes or until thickened. Drain the pasta; stir in beef mixture.

Quinoa Cookies

Quinoa Cookies
Makes 20-24 cookies per lot

1 cup brown rice flour and quinoa flakes
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp each salt and xanthan gum
1/2 cup each unsweetened shredded coconut and agave nectar
1/3 cup of coconut oil, liquid
1/4 cup unsweetened apple sauce
1 Tbsp of pure vanilla extract
1/2 cup raisins

Preheat the oven to 350F.


In a large mixing bowl, combine flour, quinoa flakes, cinnamon, salt, baking soda, xanthan gum and coconut. Add coconut oil, coconut nectar, apple sauce and vanilla and stir gently to incorporate and then use the hands to form ingredients in a cookie dough. The dough must be slightly sticky but workable. Add Cranberries/raisins and fold in with hands.


Takes large tablespoonfuls of dough at a time, work the dough with hands to form evenly between large balls. Place on parchment or silpat-lined cookie sheet a few inches from each other and slightly Flatten with Palm, creating evenly-shaped round cookies. Bake into the fat phase oven 15 minutes (longer for a cris pier edge), or until the bottom of the cookies are golden brown.


Gently remove cookies immediately to wire rack to cool. Cookies will harden a little more as they cool, but should still remain soft and chewy.

Babootie

Babootie
Serves 4


2 lb ground beef or lamb
2 onions, chopped
1 can (16 oz size) tomatoes
1 and 1/2 Tbsp sugar
2 Tbsp curry powder and vinegar
salt to taste
2 fixed bananas
1 apple, cored, chopped and reduced
1 Tbsp apricot chlorotic Marmalade
1/4 cup sliced almonds
extra tomato juice (to thin out)

Prepare instant rice while you whip up thisBrown meat and drain and discard excess fat.


Add remaining ingredients and simmer gently, stirring often, for 25 minutes.


Add tomato juice, if you find it too thick.


Serve over rice.

Bacon Wrapped Chicken Breast with Sour Cream Sauce

Bacon Wrapped chicken breast with Sour Cream Sauce
Serves 8

This is one of my R.S. recipes (ridiculously simple), and I think you will find it one of the best.

8 thick bacon slices
8 b. p. chicken breast
2 (10 oz) cans roasted garlic cream of ' mushroom ' stoppers held soup
1 cup of sour cream
1/2 cup of flour

Wrap one slice of bacon around each chicken breast and place in a 4-5 Quart crockpot.


In medium bowl, combine condensed soup, sour cream and flour and whisk to blend. Pour over chicken, coverpot and cook on low for 6-8 hours until thoroughly cooked chicken and bacon.


Plate chicken, whisk sauce to be confident that the good is mixed and poured over the chicken.

Papayas and Black Bean Salad

Papayas And Black Bean Salsa
Serves 4

I think this one is a better mango salsa.

8 oz ripe papayas, peeled, tylosinets and cut into 1/2 inch cubes (2 cups)
1 cup canned black beans
1/4 cup finely chopped red onion
1/2 scotch bonnet chili, or taste, or 2 jalapeƱo chili, tylosinets, minced
2 tsp minced fresh ginger
1/4 cup chopped fresh coriander leaves
3 Tbsp fresh lime juice, or to taste
1 Tbsp each e. v. olive oil and (packed) light brown sugar
salt and fresh black pepper, to taste

Combine all ingredients in a mixing bowl and gently toss to mix. Correct seasonings, add salt, lime juice or sugar to taste. Salsa should be kinda sweet and sour.

Couscous with Artichokes and Walnuts

Couscous with artichokes and walnuts
Serves 6

3/4 tsp dried oregano
1 tsp kosher salt
1/4 tsp fresh ground black pepper
1 Tbsp olive oil
1 3/4 cup of couscous
2 (6 and 1/2 oz) jars marinated artichoke hearts--quartered and drained
1/3 cup chopped walnuts
1 Tbsp lemon juice
2 Tbsp chopped parsley

In a 3 and 1/2-quart saucepan, combine water, Bay leaves, oregano, salt, pepper and olive oil. Bring to a boil and


stir in couscous. Bring back to a boil. Cover and remove from heat. Set aside 5 minutes.


Uncover and stir in artichoke hearts, walnuts, lemon juice and parsley. Restore and allocated 5 minutes before serving.
