Spinach Salad with Bacon

Creamy Spinach Salad with Bacon
Serves 4

4 bacon slices, crumbled
1 small garlic clove
2 Tbsp and topped with extra-virgin olive oil
2 Tbsp sour cream
2 Tbsp fresh lemon juice
1 tsp Brown or white sugar
1/2 lb baby spinach
1/4 cup coarsely grained grated Parmesan cheese (1 oz)

Fry, bake or delete bacon until crisp and drain on paper towels. Or buy the pre-cooked bacon and crumble it.


While bacon cooking, bluntly garlic and mash it into a paste with a pinch of salt.


Whisk garlic paste along with the next 4 ingredients in a large bowl and season with saltand pepper. Add spinach, tossing and shaking bacon and Parmesan cheese over it.

Christmas Spinach Salad with Lemon Rum Sauce

Spinach Salad with Lemon Rum Sauce
Serves 8

4 red peppers cut into triangles
2 (10 oz.) packages, baby spinach, cleaned
1 cup of lemon Rum
1/4 cup key lime juice
1 cup of mayonnaise
1 tsp lemon zest
1 Tbsp coriander, chopped
3/4 cup of olive oil e.v.

In a saucepan heat Rome and key lime juice on medium heat, and simmer until reduced by half. Remove from heat and cool in your freezer for 5 minutes.


When cooled, combine it with next 3 ingredients and whisk well. Drizzle in the olive oil slowly and keep whisking until it is incorporated in all.


Throw this dressing with spinach and red peppers and serve. Save a little dressing to dress plates.

Apple Raisin Spinach Salad

Apple Raisin Spinach Salad
Serves 6

2 packages (6 oz each) fresh baby spinach
1 medium apple, chopped
1/2 cup raisins
2 Tbsp each chopped peanuts and olive oil
1 Tbsp each of sugar and cider vinegar
1/4 tsp salt

In a large bowl, combine spinach, apple, raisins, and peanuts.


In a container with a tight-fitting lid, combine the remaining ingredients, shake well and drizzle over salad; submit to coat.
