Common Indian Food Ingredients:

Indian Food Recipes are full of ingredients that many of us in America have never heard of. So, here is a very brief description of the most common of the un-common (unless you're Indian) ones:

Aloo - Indian word for potato
Asafetida - dried gum resin of an Indian plant, with a very strong flavor and odor, never eat raw!
Atta - finely ground whole wheat flour used in many Indian breads
Basmati - a long grain rice that cooks up dry, fluffy, and tender
Bhaji - an Indian version of vegetable fritters
Biriani - A dish made of rice baked with a vegetable or meat based filling
Chutney - a blend of fruits and spices cooked into a thick sauce
Elaichi - cardamom, a spice common in curry blends and garam masala
Fenugreek - Small flat seeds or a dried leaf used in curries for slightly bitter flavor
Garam Masala - literally, warm spices; a blend of spices used to flavor dishes that varies by region
Ghee - clarified butter, made by slowly melting butter, skimming the foam, saving the liquid, discarding the white butter
solids...can be heated to a higher temperature without burning than ordinary butter
Halwa - congealed, translucent sweet dish made of fruits and syrups
Jaggery - dried sugar cane juice; the most common form of sugar in India
Korma - a sauce made with yogurt and ground nuts or seeds, especially poppy seeds
Masala - Hindi word for 'spice'
Paratha - unleavened fried bread made with whole wheat flour, soften filled with meat and vegetables
Poppadums - spicy wafers made from lentils or legumes
Raita - a salad made from vegetables and yogurt to accompany hot and spicy dishes
Roti - the Indian word for bread
Samosas - deep fried crisp pastry, filled with vegetables or meat...served as an appetizer
Tandoor - a large, deep oven made from clay that cooks at very high temperatures. Tandoori is the name for any recipe cooked in the tandoor
Vindaloo - a very spicy dish made with garam masala, meat and vinegar

Spicy Mushroom Masala
Serves 4

This tasty Indian dish shouldn?t make a trip to the specialty market necessary; your reasonably well-stocked kitchen will contain all you need.

Ingredients for the paste
1 onion , chopped
2 tomatoes , roughly chopped
1 of ginger (adrak) and garlic (lehsun)
1 of each clove , cinnamon and cardamom
Others
1 tsp oil
1 tsp chilli powder
10 to 15 mushrooms (khumbh)
salt to taste
chopped coriander (dhania) for garnishing

Heat the oil, add the paste and saute on a medium flame for a few minutes.

Add the salt and chilli powder, mushrooms and 1 cup of water, cover and cook for 4-5 minutes.

Serve hot garnished with coriander.

Quinoa Cookies

Quinoa Cookies
Makes 20-24 cookies per lot

1 cup brown rice flour and quinoa flakes
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp each salt and xanthan gum
1/2 cup each unsweetened shredded coconut and agave nectar
1/3 cup of coconut oil, liquid
1/4 cup unsweetened apple sauce
1 Tbsp of pure vanilla extract
1/2 cup raisins

Preheat the oven to 350F.


In a large mixing bowl, combine flour, quinoa flakes, cinnamon, salt, baking soda, xanthan gum and coconut. Add coconut oil, coconut nectar, apple sauce and vanilla and stir gently to incorporate and then use the hands to form ingredients in a cookie dough. The dough must be slightly sticky but workable. Add Cranberries/raisins and fold in with hands.


Takes large tablespoonfuls of dough at a time, work the dough with hands to form evenly between large balls. Place on parchment or silpat-lined cookie sheet a few inches from each other and slightly Flatten with Palm, creating evenly-shaped round cookies. Bake into the fat phase oven 15 minutes (longer for a cris pier edge), or until the bottom of the cookies are golden brown.


Gently remove cookies immediately to wire rack to cool. Cookies will harden a little more as they cool, but should still remain soft and chewy.
